first edition. A treasury of distinctively Cuban dishes such as "Ropa-Vieja Cubana" (page 19). The cuisine's African roots are clearly on display with dishes such as "Fufú Criollo" (page 45). The book concludes with long sections on food preservation, production of alcoholic beverages (including the "Método para hacer el rico Rom cubano" on pages 134-6), and manners.
